Season chicken thighs generously with salt and pepper. Heat a large oven-safe skillet over medium-high heat and sear the chicken skin-side down for 6 to 8 minutes until the skin is golden and crispy then flip and cook for 3 more minutes.

Remove chicken from the pan and drain excess fat leaving about 1 tablespoon. Saute garlic for 30 seconds then add sun-dried tomatoes and cook for 1 minute to develop flavor.

Add Cream and Simmer

Pour in the heavy cream and bring to a gentle simmer. Stir in parmesan cheese until melted and smooth then add spinach and stir until wilted. Season the sauce with salt and pepper to taste.

Return chicken thighs to the pan skin-side up and simmer uncovered for 12 to 15 minutes until chicken is cooked through and the sauce has thickened. Serve hot directly from the pan.
