Instructions
Blend the Cashew Cream
Drain soaked cashews and blend with vegetable broth nutritional yeast lemon juice and onion powder until completely smooth and creamy. Season with salt and pepper.
Cook the Garlic
Saute minced garlic in a skillet over medium heat with a splash of oil for 1 to 2 minutes until fragrant but not browned.
Add Spinach and Sauce
Add squeezed spinach to the skillet and stir well. Pour cashew cream over spinach and stir everything together over medium-low heat.
Simmer and Serve
Simmer the dip for 5 to 8 minutes stirring frequently until thickened and heated through. Serve warm with bread chips or vegetables.
