Instructions
Saute the Aromatics
Melt butter in a large pot over medium heat. Add the diced onion and cook for about 5 minutes until translucent and softened. Season with salt and pepper during this stage.
Simmer the Zucchini
Add the chopped zucchini and vegetable broth to the pot. Bring to a boil then reduce the heat and simmer for 15 minutes until the zucchini is completely tender when pierced with a fork.
Blend Until Smooth
