Instructions
Prep the Chicken
Preheat oven to 400 degrees F and line a baking sheet with parchment paper. Cut the chicken breasts into 1 and a half inch nugget sized pieces and pat them dry with paper towels.
Set Up the Breading Station
In one shallow bowl whisk together the eggs. In a second shallow bowl combine the panko breadcrumbs, Parmesan cheese, garlic powder, and paprika. Drizzle the olive oil over the breadcrumb mixture and toss to combine.
Bread the Nuggets
Dip each piece of chicken into the egg mixture letting the excess drip off, then press firmly into the breadcrumb mixture on all sides. Place on the prepared baking sheet in a single layer without touching.
Bake Until Golden
Bake for 18 to 20 minutes flipping halfway through until the nuggets are golden brown and cooked through to an internal temperature of 165 degrees F. Serve immediately with ketchup, honey mustard, or ranch.
