Instructions
Cook the Quinoa
Rinse quinoa under cold water then cook in 2 cups of water over medium heat for 15 minutes until fluffy. Fluff with a fork and set aside.
Press and Season Tofu
Press tofu firmly for at least 5 minutes using paper towels then cube into 1 inch pieces. Toss with soy sauce sesame oil and nutritional yeast until well coated.
Pan Fry the Tofu
Heat a non-stick pan over medium-high heat and cook tofu pieces for 4 to 5 minutes per side until golden and crispy on all edges. Do not move them too early or they will not crisp properly.
Assemble the Bowl
Divide quinoa into bowls then top with crispy tofu and edamame. Drizzle with any remaining sauce from the pan and serve immediately.
