Instructions
Make the Bechamel Sauce
Melt 1 tablespoon of butter in a saucepan over medium heat and whisk in the flour to form a roux. Cook for 1 minute then slowly pour in the milk while whisking constantly until the sauce thickens. Season with salt, pepper, and a pinch of nutmeg.
Build the Sandwich
Butter the outside of all four bread slices with the remaining butter. Layer ham and half the grated Gruyere between two slices of bread with the buttered sides facing outward. Repeat for the second sandwich.
Grill the Sandwich
Heat a skillet or griddle over medium heat and cook the sandwiches for 3 minutes per side until golden brown and the cheese inside has melted fully. Press gently with a spatula to ensure even contact.
Top and Broil
Transfer the grilled sandwiches to a baking sheet and spoon the bechamel sauce over the top of each. Sprinkle the remaining Gruyere over the sauce and broil in the oven for 3 to 4 minutes until bubbling and golden brown on top.
