Instructions
Prepare the Cucumber Ribbons
Use a vegetable peeler or mandoline slicer to cut the English cucumbers lengthwise into long, thin, flexible ribbons. Pat the ribbons dry with a paper towel to remove excess moisture.
Make the Avocado Filling
Scoop the avocado flesh into a bowl and mash with lime juice, minced garlic, chopped dill or cilantro, and salt until creamy with a bit of texture remaining.
Assemble the Rolls
Lay a cucumber ribbon flat on a clean surface. Spread one tablespoon of avocado filling at one short end of the ribbon. Place a few strips of red bell pepper on top of the filling.
Roll and Secure
Gently roll the cucumber ribbon around the filling from one end to the other. Secure with a toothpick if needed to hold the roll together during serving.
