Date Truffles
These date truffles are a decadent yet wholesome vegan treat made from blended Medjool dates rolled in cocoa powder or shredded coconut. Completely vegan and naturally sweetened, these no-bake bites taste like indulgent chocolate truffles without any refined sugar.

Soak and Prep Dates
If your dates are not very soft, soak them in warm water for 10 minutes and drain well. Remove all pits if not already done.
Blend the Mixture
Add dates, almonds, cocoa powder, vanilla extract, and sea salt to a food processor. Process for 2 to 3 minutes until the mixture is sticky and holds together when pressed between your fingers.
Roll into Balls
Using a tablespoon, scoop portions of the mixture and roll them between your palms to form smooth balls about 1 inch in diameter. The mixture should hold together easily.
Coat and Chill
Roll each truffle in shredded coconut, cocoa powder, or finely chopped nuts. Place on a lined tray and refrigerate for 30 minutes until firm before serving.
