Instructions
Prepare the Filling
In a bowl, mix ricotta, mozzarella, and meat sauce until combined. Spread a thin layer of filling onto each cooked lasagna noodle, then roll tightly into a log. Refrigerate for 15 minutes to firm up.
Cut into Bites
Remove the chilled lasagna rolls from the refrigerator and cut each roll into 1.5 inch pieces. Press the ends gently to seal the filling inside each bite.
Set Up Breading Station
Arrange three shallow bowls with flour, beaten eggs, and panko breadcrumbs. Dredge each lasagna bite in flour first, then dip in egg, then coat thoroughly in panko, pressing gently to adhere.
Fry the Bites
Heat vegetable oil to 350 degrees Fahrenheit in a deep pot. Fry the breaded bites in batches of 4 to 5 for 3 to 4 minutes until deep golden brown. Do not overcrowd the pot. Drain on paper towels.
Serve Hot
