Instructions
Make the Batter
Whisk eggs and sugar together in a bowl until pale and slightly fluffy about 2 minutes. Add honey then sift in flour and baking powder and stir to combine. Add water gradually until a smooth thick pourable batter forms.
Rest the Batter
Cover the bowl with plastic wrap and let the batter rest at room temperature for 10 minutes. This resting time helps the gluten relax and makes the pancakes softer and more fluffy when cooked.
Cook the Pancakes
Heat a non stick pan over low medium heat and lightly grease with a paper towel dipped in oil. Pour 2 tablespoons of batter per pancake and cook until bubbles appear on the surface about 2 minutes then flip and cook 1 more minute.
Assemble and Serve
Allow the pancakes to cool completely then spread a generous tablespoon of sweet red bean paste onto the flat side of one pancake. Press a second pancake flat side down on top and press gently to create the classic dorayaki sandwich shape.
