Instructions
Prepare the Kataifi Filling
Toast kataifi pastry in a dry pan over medium heat stirring constantly for 4 to 5 minutes until golden and fragrant. Remove from heat and cool completely. Mix cooled kataifi with pistachio cream until well combined to form a thick spreadable filling.
Assemble the Stuffed Toast
Spread a generous layer of the pistachio kataifi filling onto 4 brioche slices. Press the remaining 4 slices on top to create sandwiches. Press gently around the edges to help seal the filling inside. Do not overfill or the filling will spill out during cooking.
Make the Custard Dip
Whisk together eggs whole milk vanilla extract and ground cinnamon in a wide shallow bowl until smooth and fully combined. The bowl should be wide enough to fit the assembled sandwiches flat for even coating.
Cook the French Toast
Melt butter in a large non-stick skillet over medium heat. Dip each stuffed sandwich into the custard mixture letting it soak for 30 seconds per side. Place in the pan and cook for 3 to 4 minutes per side until deep golden brown and the custard is fully cooked through.
Drizzle and Serve
Transfer cooked French toast to serving plates. Drizzle generously with melted dark chocolate. Scatter crushed pistachios over the top and serve immediately while hot. Pair with a dusting of powdered sugar or a dollop of whipped cream if desired.
