Instructions
Sear the Beef
Heat your Dutch oven over medium-high heat with a drizzle of oil. Season the beef chunks generously with salt and pepper, then sear in batches until browned on all sides. Remove and set aside.
Build the Base
In the same Dutch oven, add the tomato paste and stir for one minute. Pour in the beef broth and diced tomatoes, scraping up any browned bits from the bottom of the pot.
Combine and Simmer
Return the seared beef to the pot and add the carrots and potatoes. Bring everything to a boil, then reduce the heat to low, cover, and simmer for 90 minutes until the beef is tender.
Finish and Serve
Taste and adjust seasoning with salt and pepper. Let the stew rest for five minutes before ladling into bowls and serving with crusty bread.
