Instructions

Mash with Garlic
Transfer fried plantains to a large bowl or pilon and mash with minced garlic, a drizzle of olive oil, and salt until a slightly chunky paste forms.
Shape the Mofongo
Press mashed plantains into a bowl or cup, then invert onto a plate to create a round mound shape.
