Easy Fruit Pizza

Bake the Cookie Crust
Press the refrigerated sugar cookie dough evenly onto a greased round 12 inch pizza pan or baking sheet forming a large circle about one quarter inch thick. Bake in a preheated 350 degree oven for 12 minutes until golden around the edges and set in the center. Cool completely.
Make the Cream Cheese Frosting
Beat the softened cream cheese with the powdered sugar and vanilla extract using a hand mixer or stand mixer until completely smooth and fluffy with no lumps. The frosting should be thick enough to spread without running off the cookie crust.
Spread the Frosting
Once the cookie crust is completely cooled spread the cream cheese frosting evenly over the surface leaving a small border around the edge like a real pizza. The frosting should be about a quarter inch thick and cover the entire cookie surface.
