Prep the Muffin Tin

Preheat oven to 375 degrees F. Generously grease a 12 cup standard muffin tin with butter or nonstick cooking spray making sure to coat the sides well so the corn dogs pop out easily.

Make the Cornbread Batter

In a medium bowl combine the corn muffin mix, egg, milk, and honey. Stir until just combined with a few small lumps remaining. Do not overmix the batter or the corn dogs will be tough.

Fill and Insert Hot Dogs

Spoon about 2 tablespoons of cornbread batter into each muffin cup filling them halfway. Press one hot dog half vertically into the center of each cup. The batter will rise up around the sides during baking.

Bake and Serve

Bake for 18 to 20 minutes until the cornbread is golden brown on top and a toothpick inserted into the cornbread portion comes out clean. Let cool in the tin for 3 minutes then use a butter knife to pop them out. Serve with ketchup and mustard.
