Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper and lay flatbreads flat on the sheet.

Stir za-atar spice blend with olive oil in a small bowl until it forms a paste. This is the traditional topping base for manoushe.

Spread za-atar oil lightly over each flatbread then top generously with shredded mozzarella and a pinch of dried oregano.

Bake for 10 to 12 minutes until cheese is fully melted and bubbling and edges of flatbread are slightly crispy. Slice and serve warm.
