Soak rice vermicelli noodles in room temperature water for 10 minutes until slightly softened then drain and set aside while you prepare the other ingredients.

Cook the Chicken and Aromatics

Heat oil in a large wok or skillet over medium high heat cook garlic for 30 seconds until fragrant then add chicken slices and stir fry for 4 to 5 minutes until fully cooked through.

Add Vegetables and Noodles

Add carrots and cabbage to the wok and stir fry for 2 minutes then add the soaked noodles soy sauce and chicken broth tossing everything together until noodles absorb the liquid.

Finish and Garnish

Continue tossing the noodles over medium heat for 3 to 4 more minutes until fully cooked and slightly caramelized then transfer to a large platter and serve with calamansi or lemon wedges.
