Instructions
Brown the Chorizo
Heat a cast iron or oven-safe skillet over medium-high heat. Add chorizo and break it apart with a spatula cooking for 5 to 6 minutes until browned and cooked through. Do not drain the fat.
Cook the Aromatics
Add diced onion and minced jalapeno to the chorizo fat in the pan. Cook for 2 to 3 minutes until softened and translucent stirring occasionally to prevent burning.
Add the Eggs
Create 4 small wells in the chorizo mixture using a spoon. Crack one egg into each well and season with salt and pepper. Cover the skillet with a lid and cook for 4 to 5 minutes until whites are set but yolks remain runny.
Melt Cheese and Serve
Sprinkle shredded monterey jack cheese over the entire skillet and cover for 1 more minute until melted. Remove from heat, garnish with fresh cilantro, and serve directly from the skillet.
