Instructions
Preheat Broiler and Prep
Preheat your oven broiler to high. Whisk the egg whites with salt and pepper in a bowl until slightly foamy. An oven-safe non-stick skillet is essential for this recipe.
Saute the Vegetables
Heat olive oil in an oven-safe skillet over medium heat. Add the cherry tomatoes and cook for 2 minutes. Add the spinach and stir until just wilted, about 1 minute more.
Cook the Base
Pour the whisked egg whites over the vegetables and gently shake the pan to distribute evenly. Cook undisturbed over medium heat for 3 to 4 minutes until the edges are set but the center is still slightly jiggly.
