Flower Quesadillas
These cheesy flower shaped quesadillas are a kid friendly lunch or dinner that makes vegetables disappear into something beautiful and delicious. The petal design cut from tortillas makes kids excited to eat their meal and even try new veggie toppings.

Instructions
Assemble the Quesadillas
Sprinkle shredded cheese evenly over half of each tortilla. Add a thin layer of refried beans if using then fold the tortilla in half to create a half moon shape.
Cook Until Golden
Heat butter in a large nonstick skillet over medium heat. Add one folded quesadilla and cook for 2 to 3 minutes per side until golden and crispy and the cheese is fully melted.
Cut the Flower Shape
Let quesadillas cool for 2 minutes then use a flower shaped cookie cutter or cut petal shapes by hand with a knife. Arrange petals in a circle on the plate leaving a space in the center.
Add the Flower Center
Place a round slice of yellow bell pepper in the center of each flower arrangement. Serve with sour cream or salsa for dipping on the side.
