Instructions
Prepare the Pan
Line a large baking sheet or rimmed sheet pan with parchment paper. Make sure the parchment hangs slightly over the edges so you can lift the frozen bark out easily later.
Spread the Yogurt
Pour the vanilla Greek yogurt onto the prepared baking sheet and use a spatula to spread it into an even layer about half an inch thick across the entire surface.
Decorate the Top
Scatter the sliced strawberries and blueberries evenly across the yogurt surface. Sprinkle granola and shredded coconut over the fruit then drizzle honey across everything in a zigzag pattern.
Freeze and Break
Place the baking sheet flat in the freezer for at least two hours until completely solid. Once frozen, lift the parchment and break the bark into irregular pieces. Serve immediately or store in a zip bag in the freezer.
