Instructions
Preheat Oven and Prepare Pan
Preheat your oven to 350 degrees Fahrenheit. Line an 8x8 inch baking pan with parchment paper leaving overhang on two sides to act as handles for easy removal. Lightly grease the parchment paper.
Whip the Aquafaba
Pour the aquafaba into a medium bowl and beat with a hand mixer on high speed for 3 to 4 minutes until it becomes frothy and slightly thickened. This step adds lift and helps create that classic crinkly brownie top.
Mix Wet Ingredients
Add the melted coconut oil, granulated sugar, and vanilla extract to the whipped aquafaba. Stir together gently until the sugar is mostly dissolved and the mixture looks glossy and smooth.
Fold In Dry Ingredients
Sift the flour, cocoa powder, baking powder, and salt over the wet mixture. Fold together with a spatula until just combined, then fold in the vegan chocolate chips. Do not overmix the batter.
Bake and Cool
Pour the batter into the prepared pan and spread it evenly. Bake for 22 to 26 minutes until the edges look set but the center still has a slight jiggle. Allow the brownies to cool completely in the pan before lifting out and slicing into 12 pieces.
