Instructions
Blanch the Ribs
Soak short ribs in cold water for 30 minutes to draw out blood then drain. Blanch ribs in boiling water for 5 minutes and discard this water rinsing ribs clean.
Make the Broth
Place cleaned ribs in a fresh pot with 8 cups of cold water, garlic, and onion. Bring to a boil then reduce to a medium low simmer.
Simmer Until Tender
Simmer the soup for 80 to 90 minutes skimming any foam or fat from the surface regularly throughout cooking. The ribs should be very tender and the broth should be clear and flavorful.
Season and Serve
Season the broth with salt to taste and remove the onion before serving. Ladle into bowls garnished with chopped green onions and serve with steamed rice and simple side dishes.
