Using a sharp knife, carefully slice each chicken breast horizontally through the thickest part without cutting all the way through, creating a pocket. Season the outside of both breasts with salt and paprika.

Spoon equal amounts of the yogurt spinach filling into each chicken pocket. Secure the opening with two or three toothpicks to prevent the filling from spilling out during baking.
