Instructions
Preheat and Prepare the Filling
Preheat your oven to 400 degrees Fahrenheit. In a bowl, mix together Greek yogurt, chopped spinach, minced garlic, paprika, salt, and pepper until fully combined into a thick, creamy filling.
Butterfly the Chicken
Using a sharp knife, carefully slice each chicken breast horizontally through the thickest part without cutting all the way through, creating a pocket. Season the outside of both breasts with salt and paprika.
Stuff and Seal the Chicken
Spoon equal amounts of the yogurt spinach filling into each chicken pocket. Secure the opening with two or three toothpicks to prevent the filling from spilling out during baking.
Bake Until Cooked Through
Place the stuffed chicken breasts in a lightly greased baking dish and bake at 400 degrees Fahrenheit for 28 to 30 minutes until the internal temperature reaches 165 degrees Fahrenheit. Remove toothpicks before serving.
