Instructions
Mix the Tuna Filling
In a medium bowl combine drained tuna, Greek yogurt, dijon mustard, and diced celery. Mix thoroughly until everything is evenly coated and the yogurt is fully incorporated.
Season the Mixture
Add salt, black pepper, and a squeeze of lemon juice to the tuna mixture. Stir again and taste to adjust seasoning to your preference before assembling.
Assemble the Wraps
Lay each whole wheat tortilla flat on a clean surface. Layer baby spinach leaves across the center of each tortilla. Spoon half of the tuna mixture onto each bed of spinach.
Wrap and Serve
Fold in the sides of the tortilla then roll tightly from the bottom up to form a secure wrap. Slice in half diagonally and serve immediately or wrap in foil for meal prep storage.
