Instructions
Marinate the Zucchini
Slice the zucchini lengthwise into half-inch thick planks. Brush generously on both sides with olive oil mixed with minced garlic. Season well with salt and pepper and let sit for 5 minutes.
Preheat the Grill
Heat your grill or grill pan to high heat. The grill must be very hot before adding the zucchini to achieve proper char marks and prevent sticking.
Grill the Zucchini
Place the zucchini planks on the hot grill and cook for 3 to 4 minutes per side without moving them. You want clear grill marks and tender flesh without the pieces becoming mushy.
