Make the Mint Simple Syrup

Combine the honey or simple syrup with the lime juice and lime zest in a small bowl or pitcher and stir well until the sweetener is fully dissolved. Add the fresh mint sprigs and muddle gently with a spoon or muddler to release the aromatic oils without shredding the leaves. Allow to sit for 5 minutes for the flavors to infuse.

Combine with Passion Fruit

Add the passion fruit juice or pulp to the lime and mint mixture and stir to combine. Taste and adjust sweetness or acidity by adding more honey or lime juice according to your preference. Remove the muddled mint sprigs at this point as fresh garnish mint will be added later.

Build the Glasses

Fill 4 tall glasses generously with ice cubes. Divide the passion fruit and lime mixture evenly between the 4 glasses, pouring it over the ice. Leave enough room at the top of each glass for the sparkling guarana soda.

Top and Garnish

Slowly pour the chilled guarana soda into each glass over the back of a spoon to preserve as much carbonation as possible. Stir gently just once to combine the layers without losing the fizz. Garnish each glass with a fresh sprig of mint, a slice of lime on the rim, and serve immediately while cold and bubbly.
