
Homemade Vada Pav
Known as the Indian burger, vada pav is a wildly popular kid friendly recipe featuring a spiced potato patty inside a soft bun. Kids love this kid friendly recipe because it looks and feels like a burger but is packed with satisfying potato flavor.

Instructions
Make Potato Filling
Mix mashed potatoes with curry powder and half the salt until well combined. Divide into 8 equal portions and shape each into a smooth round patty about 2 inches wide. Set aside on a plate.
Make the Batter
In a bowl mix chickpea flour, turmeric, remaining salt, and enough water to make a thick smooth batter similar to pancake batter. It should coat the back of a spoon without running off immediately.
Fry the Vada
Heat oil in a deep pan to 175 degrees Celsius. Dip each potato patty into the batter and coat evenly. Carefully slide into hot oil and fry for 3 to 4 minutes until golden and crispy. Drain on paper towels.
Assemble and Serve
Lightly toast the buns in a dry pan or toaster. Place a hot vada inside each bun. Serve immediately with ketchup or mild green chutney for kids to dip and enjoy as a fun snack or meal.
