Instructions
Make the hot honey
Warm honey in a small saucepan over low heat for 2 minutes. Add red pepper flakes and ground ginger and stir well. Do not let the honey boil.
Heat the water
Heat water until it is hot but not boiling, around 190 degrees Fahrenheit. Boiling water can destroy some of the honey nutrients and alter the flavor.
Combine ingredients
Pour the hot water into mugs. Add freshly squeezed lemon juice and the hot honey mixture. Stir well to combine everything evenly.
Season and balance
Add a pinch of sea salt to enhance all flavors. Taste and adjust honey or lemon juice to reach your preferred balance of sweet and tart.
Garnish and serve
Place a lemon slice on the rim and a cinnamon stick in each mug as a stirrer. Serve immediately while hot.
