If using refrigerated egg noodles, blanch them briefly in boiling water for 1 minute to loosen. Drain and toss with a little oil to prevent sticking. Set aside.

Heat 2 tablespoons of oil in a wok or large skillet over high heat. Add the shallots, garlic, and red chili and stir fry for 2 to 3 minutes until fragrant and golden.

Push the aromatics to the side and crack the eggs into the wok. Scramble them quickly for about 1 minute until just set, then mix them into the aromatics. Add the noodles to the wok and toss everything together over high heat.

Pour the kecap manis over the noodles and toss continuously for 2 to 3 minutes until every noodle strand is evenly coated and slightly caramelized. Taste and adjust with a pinch of salt if needed. Serve hot with a fried egg on top if desired.
