Instructions
Prepare the Noodles
If using refrigerated egg noodles, blanch them briefly in boiling water for 1 minute to loosen. Drain and toss with a little oil to prevent sticking. Set aside.
Fry the Aromatics
Heat 2 tablespoons of oil in a wok or large skillet over high heat. Add the shallots, garlic, and red chili and stir fry for 2 to 3 minutes until fragrant and golden.
Add Eggs and Noodles
Push the aromatics to the side and crack the eggs into the wok. Scramble them quickly for about 1 minute until just set, then mix them into the aromatics. Add the noodles to the wok and toss everything together over high heat.
Season and Serve
