Instructions
Brown the Beef
Set the Instant Pot to Saute mode and add the ground beef. Break it apart and cook for 5 to 6 minutes until browned. Drain excess fat if needed.
Add Vegetables and Spices
Add the diced green bell pepper to the pot and cook for 2 minutes. Stir in the chili powder and cook for 1 minute until the spices bloom.
Pressure Cook
Add the diced tomatoes, kidney beans, and beef broth. Stir to combine. Secure the lid, set the valve to Sealing, and cook on High Pressure for 20 minutes. Do a quick release when done.
Thicken and Serve
Stir the chili well after opening. If you prefer a thicker consistency, switch to Saute mode and simmer uncovered for 5 minutes. Serve with sour cream, shredded cheese, or crackers.
