Instructions
Saute the Aromatics
Set the Instant Pot to Saute mode. Add a drizzle of oil and cook the diced onion for 3 minutes until softened. Add the minced garlic and tikka masala spice blend and cook for 1 more minute until fragrant.
Add Chicken and Tomatoes
Add the cubed chicken thighs and crushed tomatoes to the pot. Stir everything together to combine well, making sure the chicken is coated in the sauce.
Pressure Cook
Secure the lid and set the valve to Sealing. Cook on High Pressure for 10 minutes. Once done, allow a natural pressure release for 5 minutes, then carefully do a quick release.
Finish with Cream
Open the lid and stir in the heavy cream. Switch to Saute mode and simmer for 3 to 5 minutes until the sauce thickens slightly. Serve over basmati rice or with naan bread.
