Instructions
Prepare the Glasses
Warm two heatproof glass mugs or Irish coffee glasses by filling them with just-boiled water and allowing them to sit for one minute, then emptying. This ensures the hot coffee does not cool down too quickly and helps the cream float to sit more stably on the surface.
Sweeten the Coffee
Add one tablespoon of brown sugar and half a teaspoon of molasses to each warmed glass and pour the freshly brewed hot coffee over. Stir vigorously until the sugar and molasses have completely dissolved into the coffee. The molasses adds a rich bittersweet depth that mimics the whiskey note of the original.
Whip the Cream Float
Pour the cold double cream into a chilled bowl and add the vanilla extract and a small pinch of salt. Lightly whip using a small whisk until the cream has thickened slightly and holds a very soft ribbon. It should be pourable but not completely liquid. Do not whip it to stiff peaks.
Float and Serve
Hold a spoon curved side up just above the surface of the coffee. Slowly pour the lightly whipped cream over the back of the spoon so it floats gently on top of the coffee rather than sinking into it. Do not stir. Serve immediately and drink the coffee through the cold cream float.
