Instructions
Cook the Noodles
Boil the sweet potato glass noodles in a large pot of water for 6 to 8 minutes until tender but still chewy. Drain and rinse under cold water, then toss with a tablespoon of sesame oil to prevent sticking.
Prepare the Beef and Vegetables
Season the sliced beef with one tablespoon of soy sauce and set aside. Blanch the spinach in boiling water for 30 seconds, drain, squeeze out excess water, and season with a small pinch of salt and sesame oil.
Stir-Fry Everything
In a large wok or skillet over medium-high heat, cook the beef until browned. Add the sliced onion and stir-fry for 2 minutes. Add the noodles and remaining soy sauce, tossing everything together for 3 to 4 minutes until well combined.
Combine and Serve
Add the blanched spinach to the wok and toss gently to incorporate. Drizzle with remaining sesame oil, sprinkle with sesame seeds, and serve warm or at room temperature as a side or main dish.
