Toss sliced apples with sugar, cinnamon and raisins if using in a bowl until evenly coated. Let sit 5 minutes while the pastry is being prepared so the apples release a little juice.

Unroll puff pastry on a lightly floured surface and spread apple filling evenly across the pastry leaving a 1 inch border all around. Roll the pastry tightly from one long side and pinch ends to seal.
