Instructions
Make the Dough
Mix flour, eggs and sour cream together in a bowl until a soft dough forms, knead 3 minutes until smooth. Wrap in plastic and rest at room temperature 20 minutes while preparing filling.
Prepare the Filling
Combine cooled mashed potatoes with shredded cheddar cheese and mix until well blended. Season with salt and pepper to taste and set aside.
Fill and Seal the Pierogi
Roll dough to quarter inch thickness and cut into 3 inch circles using a glass or cookie cutter. Place a teaspoon of filling in the center of each circle, fold over and press edges firmly to seal.
Boil Then Pan Fry
Boil pierogi in salted water 4 minutes until they float then drain. Melt butter in a skillet over medium heat, add onions and cook 2 minutes then add boiled pierogi and fry 2 minutes per side until golden.
