Instructions
Make the Lavender Simple Syrup
Combine the dried lavender buds with one cup of the filtered water and raw honey in a small saucepan. Heat over medium heat stirring until the honey dissolves then remove from heat and steep for 10 minutes before straining.
Juice the Lemons
While the lavender syrup steeps juice all three lemons into a large pitcher. Roll the lemons firmly on the counter before cutting as this releases more juice from the flesh.
Combine and Mix
Strain the lavender syrup through a fine mesh sieve into the pitcher with the lemon juice. Add the remaining two cups of filtered water and a pinch of Himalayan pink salt. Stir well and taste for sweetness adjusting if needed.
Serve and Garnish
Fill four glasses with ice and pour the lavender lemonade base three-quarters full. Top each glass with a splash of sparkling water and garnish with a fresh lemon slice and a small sprig of lavender if available.
