Instructions
Prepare the Lemongrass
Trim the lemongrass stalks by removing the tough outer layers and cutting off the woody tops. Bruise the stalks with the back of a knife or a rolling pin to release the essential oils and fragrant compounds.
Make Lemongrass Syrup
Combine sugar, 1.5 cups water, and bruised lemongrass stalks in a saucepan over medium heat. Bring to a simmer and cook for 5 minutes, then remove from heat and steep for 20 minutes before straining and cooling.
Mix the Limeade
Combine the cooled lemongrass syrup and fresh lime juice in a large pitcher. Stir together and taste, adjusting sweetness and tartness to your preference.
Add Sparkling Water and Serve
Just before serving, add the cold sparkling water and gently stir. Pour over ice and garnish with a stalk of lemongrass and a lime wheel for a beautiful tropical presentation.
