Instructions
Prep the Filling
In a bowl combine sliced bell pepper corn black beans and taco seasoning. Stir together so the seasoning coats all the vegetables evenly.
Assemble the Quesadilla
Heat a skillet over medium heat. Place a tortilla in the pan and sprinkle half with shredded cheese then top the cheese with the seasoned veggie mixture. Fold the tortilla over to close.
Cook Until Golden
Cook the quesadilla for 3 to 4 minutes until the bottom is golden and crispy then carefully flip and cook the other side for another 2 to 3 minutes until equally golden and cheese is fully melted.
Slice and Serve
Transfer to a cutting board and let rest for 1 minute then slice into wedges with a knife or pizza cutter. Serve with salsa sour cream or guacamole.
