
Mango Habanero Fizz
A fiery and fruity sparkling drink that combines ripe mango with the intense heat of habanero. This fizz is not for the faint of heart.

Instructions
Make habanero simple syrup
Combine sugar, water, and minced habanero in a small saucepan over medium heat. Stir until sugar dissolves then simmer for 3 minutes. Strain through a fine mesh sieve and let cool completely.
Blend the mango base
Stir together mango puree, lime juice, and 2 tablespoons of the cooled habanero syrup in a pitcher. Mix well and taste for heat level.
Prepare the glasses
Rim each glass with lime juice and a pinch of tajin seasoning. Add ice to each glass.
Build the drink
Pour the mango habanero mixture over ice until glasses are three quarters full. Slowly top with club soda and do not stir to preserve the fizz.
Garnish and serve
Slide a fresh mango slice onto the rim of each glass. Serve immediately and warn guests about the heat level.
