Instructions
Whisk the Matcha
Sift the matcha powder into a small bowl. Add the hot water and whisk in a rapid W or M motion until the matcha is fully dissolved and slightly frothy with no clumps remaining.
Prepare the Kiwi Puree
Add the peeled kiwi slices to a blender along with the honey and lime juice. Blend on high until completely smooth. Strain through a fine mesh sieve if you prefer a pulp free drink.
Chill the Matcha
Allow the whisked matcha to cool to room temperature or place it in the refrigerator for 5 minutes. Do not add ice directly to hot matcha as it will dilute the flavor too quickly.
Layer the Drink
Fill two tall glasses with ice cubes. Pour the kiwi puree evenly into the bottom of each glass. Slowly pour the chilled matcha over the back of a spoon to create a distinct green layer on top.
Add Fizz and Serve
Gently pour chilled sparkling water into each glass and give a very light stir to combine slightly. Garnish with kiwi slices on the rim and serve immediately.
