Instructions
Cook the corn
Place frozen corn and chicken broth in a large microwave-safe bowl and microwave on high for 3 minutes until the corn is fully thawed and heated through.
Blend partially
Use an immersion blender to blend about half of the soup mixture creating a creamy base while keeping plenty of whole corn kernels for texture.
Add cream and potatoes
Stir in heavy cream, pre-cooked diced potatoes, and smoked paprika then microwave on high for another 2 to 3 minutes until the soup is steaming hot.
Serve
Season with salt and pepper then ladle into bowls and garnish with extra paprika, chives, or shredded cheese if desired.
