Instructions
Trim Artichoke
Cut off the top inch of the artichoke and trim the stem to about an inch. Pull off any small tough outer leaves at the base and rub any cut surfaces with lemon juice to prevent browning.
Wrap and Prep
Place the artichoke upside down in a microwave-safe bowl with 3 tablespoons of water at the bottom. Drizzle remaining lemon juice over the top and sprinkle with salt. Cover tightly with plastic wrap.
Microwave
Microwave on high for 7 minutes until a leaf pulls away easily and the base is tender when pierced with a fork. Add an additional minute if needed.
Serve
Let the artichoke rest covered for 1 minute then carefully uncover away from you. Serve with melted butter or mayo for dipping.
