Instructions
Marinate the Chicken
Mix vinegar and mild vindaloo paste together in a bowl. Add chicken pieces and coat well. Let marinate for at least 10 minutes while you prepare other ingredients.
Saute the Base
Heat oil in a large pan over medium heat. Add garlic paste and stir for 30 seconds until fragrant. Add the marinated chicken and cook for 5 minutes stirring occasionally until lightly browned.
Add Tomatoes and Simmer
