Instructions
Saute the Chicken
Heat olive oil in a large skillet over medium heat and cook the diced chicken for 6 to 7 minutes stirring until lightly golden on the outside and nearly cooked through.
Add Curry and Vegetables
Sprinkle mild curry powder over the chicken and stir to coat. Add diced carrots and cook for 3 minutes until slightly softened and fragrant.
Pour in Coconut Milk
Pour the full can of coconut milk into the skillet and stir everything together. Bring to a gentle simmer and cook for 12 minutes until the sauce thickens slightly and carrots are tender.
Add Peas and Serve
Stir in frozen peas and cook for 2 more minutes until heated through. Ladle the mild coconut curry over cooked basmati rice and serve warm.
