Preheat and Prep

Preheat your oven to 375 degrees Fahrenheit and grease a 24 count mini muffin tin thoroughly with cooking spray. Cut each hot dog into 6 equal pieces and set aside.

Mix the Batter

Combine the cornbread mix milk egg honey and melted butter in a large bowl and stir just until the batter comes together without overmixing. A few small lumps are perfectly fine.

Fill and Top

Spoon the cornbread batter into each muffin cup filling about two thirds full then press one piece of hot dog into the center of each cup. The batter will rise around the hot dog as it bakes.
