Mumbai Vada Pav
Vada Pav is Mumbai most iconic street food, often called the Indian burger, consisting of a spiced potato fritter nestled inside a soft bread roll with chutneys. It is the fuel of the city, sold at every railway station and street corner for just a few rupees.

Instructions
Prepare the Potato Filling
Heat one teaspoon of oil in a pan and add the mustard seeds. When they splutter, add the mashed potatoes along with turmeric, salt, and chopped green chili if desired. Mix well and cook for 2 minutes. Divide into 4 equal balls and set aside to cool.
Make the Batter and Fry
Whisk the chickpea flour with turmeric, a pinch of salt, and enough water to make a thick smooth batter. Dip each potato ball into the batter to coat evenly and deep fry in hot oil at 175 degrees Celsius for 4 to 5 minutes until golden and crisp.
Toast the Rolls
Slice the pav rolls partially open and toast them cut-side down on a buttered griddle over medium heat for 1 to 2 minutes until lightly golden and warm. This step adds flavor and prevents the roll from becoming soggy.
Assemble and Serve
Spread green chutney generously on the inside of the toasted roll. Place one hot vada inside each roll and press gently. Serve immediately with extra chutney and fried green chilies on the side for an authentic Mumbai experience.
