Instructions
Peel and Soak the Beans
Soak the dried black-eyed peas in water for at least 2 hours, then rub the beans between your palms to remove the skins. Rinse thoroughly until all skins are removed.
Blend the Mixture
Combine the peeled beans, red bell pepper, scotch bonnet peppers, and onion in a blender with a small amount of water. Blend until very smooth. Pour into a bowl and stir in the oil, bouillon, and salt to taste.
Fill and Prepare for Steaming
Pour the batter into small ramekins, greased foil cups, or banana leaf packets, filling each about three-quarters full. Place a small piece of boiled egg or fish inside each one if desired.
Steam Until Set
Place the filled cups in a steamer basket over boiling water. Cover and steam for 40 to 45 minutes until the moi moi is firm, set, and pulls away from the sides when pressed gently.
