Instructions
Warm the Binding Mixture
In a small saucepan over low heat, combine the peanut butter, maple syrup, and coconut oil. Stir gently until everything is melted together and smooth. Remove from heat and stir in vanilla extract.
Combine with Oats
Pour the warm binding mixture over the rolled oats in a large mixing bowl and stir well until every oat is evenly coated. Fold in the chocolate chips and chopped nuts.
Press into the Pan
Transfer the mixture to a parchment lined 8 by 8 inch baking pan and press down firmly and evenly with the back of a spatula or your hands. The firmer you press, the better the bars will hold together.
Chill and Cut
Refrigerate for at least one hour until fully set and firm. Lift the parchment out of the pan and cut into 12 bars. Store in an airtight container in the refrigerator for up to one week.
