Instructions
Preheat and Prep Pan
Preheat your oven to 350 degrees Fahrenheit and line a 9x13 inch baking pan with parchment paper, pressing it into the corners so the bars lift out easily after baking.
Mix Wet Ingredients
In a large mixing bowl whisk together the honey, melted coconut oil, vanilla extract, and salt until everything is fully combined and smooth.
Combine and Press
Add the rolled oats, chocolate chips, and dried cranberries to the wet mixture and stir until every oat is coated, then press the mixture firmly and evenly into the prepared pan using the back of a spoon.
Bake and Cool
Bake for 22 to 25 minutes until the edges are golden brown, then remove from the oven and allow to cool completely in the pan for at least one hour before slicing into bars.
